Mung Bean Taro Dessert Soup with Energy + Immunity

Summer is the time when we can often feel sluggish due to the heat.⁠

This summer dessert soup from mung beans and taro can be your go-to treats to expel the summer heat.. Add Energy + Immunity for extra, long-lasting energy boost!⁠

Recipe:⁠
1 cup dried mung beans (pre-soaked boiled for 30 minutes)⁠
½ taro (cubed and pre-cooked for 30 mins)⁠
5-6 cups cold water⁠
2-3 pcs rock sugar (or to taste)⁠
¾ cup unsweetened coconut milk⁠
¼ cup tapioca beads, if desired⁠
1 pack Energy + Immunity⁠

How to make: ⁠
Rinse mung beans and cubed taro, boil in hot water for 30 minutes. Set aside.⁠

Drain, add to the saucepan with water, and bring to a boil. Simmer 60–90 minutes until tender, skimming foam as needed. Add tapioca pearls; cook for 15 minutes until clear. Turn down heat to low and stir in coconut milk, mung bean, and taro, stir for another 10 minutes. Serve this immediately as a warm dessert, or cold after chilling in the fridge.⁠
